I bought these adorable miniature ceramic roasting pans with no idea how I was going to use them. Then one day it hit me, why not make little mini meatloaves?! Typically I’m not one to make or eat meatloaf, if I were, it would be once in a blue moon. But I didn’t want to let this idea go by so I decided to bite the bullet and take a stab at making my very first ever meatloaf.
The first thing I thought was, “ok, how can I make a turkey meatloaf without it being dry and boring like ground turkey typically is.” Then it hit me, use turkey AND ground beef. So that’s just what I did. And to my surprise, mini almost turkey meatloaves were a hit at my house last night for dinner – my boyfriend is my #1 taste tester and gave it two thumbs up! What’s even better, these mini loaves are grain free – that’s right, you heard me, GRAIN FREE!
Almost Turkey Mini Meatloaves
prep time: 20 minutes – cook time: 35 minutes – makes 10 servings
1 1/2 cups finely chopped onion
1 tablespoon minced garlic
1 medium carrot, cut into 1/8 inch dice
1/2 teaspoon salt
1/4 teaspoon black pepper
1 1/2 teaspoons Worcestershire sauce
1/3 cup finely chopped fresh parsley
1/4 cup plus 1 tablespoon ketchup
1 cup Almond flour
1/3 cup Unsweetened Almond Milk
1 whole large egg, lightly beaten
1 large egg white, lightly beaten
1 pound ground turkey breast
1 pound 90-93% lean ground beef
Begin by preheating your oven to 400 degrees F.
In a large non-stick skillet, cook the onion and garlic, stirring, until onion is softened, about 2 minutes. Add carrot and cook, stirring occasionally, until tender. Stir in Worcestershire sauce, parsley, and 3 tablespoons of ketchup, then transfer to a large bowl and let cool.
In a separate bowl, stir together Almond flour and Almond milk. Stir in the eggs, then add the vegetables to the mixture. In a large bowl, add turkey and ground beef, then add the wet mixture. Mix well with your hands. The mixture will be very moist and slightly sticky.
If using miniature tins, make sure they are greased or sprayed with cooking spray. Measure 5 ounce servings of the meat mixture and place in to each mini pan. Use remaining ketchup to brush each mini meatloaf with. Place all meatloaves on a large cookie sheet, bake in the middle of the oven for approximately 35 minutes or until a thermometer placed in the center reaches 170 degrees F. Note: if using small loaf pans, bake for 45 minutes; and if using a regular size loaf pan, bake for 50-55 minutes.
Let meatloaves stand for 5 minutes before serving.
For these particular meatloaves, I used Trader Joe’s Organic ketchup. This made for a very sweet loaf. If you like it sweet, go for Organic! And if you like it more tangy, I’d recommend using our old friend Heinz.
