Berry Almond Quinoa Muffins

Serve Berry Almond Quinoa Muffins with Almond butter and yogurt for a delicious breakfast or post-workout meal that's gluten-free, sugar-free, oil-free, butter-free and packed with antioxidants!

Ingredients

  • 3 cups Quinoa flour
  • 2 mashed bananas
  • 1 teaspoon kosher salt or sea salt
  • 1 tablespoon baking powder
  • 1 cup unsweetened Almond milk
  • 1 teaspoon Almond extract
  • 2 eggs
  • 1 tablespoon flax meal
  • 1 cup frozen berries (I used blueberries, blackberries and raspberries)
  • 2 tablespoons artificial sweetener (I used Nectresse)

Directions

  1. Preheat oven to 350 degrees F.
  2. Line muffin tin or spray with cooking spray.
  3. Combine all ingredients in a large bowl; mix with a spoon
  4. Fill muffin tin with batter to just below the top of each muffin compartment.
  5. Bake for 15 minutes, until golden brown on top and knife comes out of center clean.
