Cinnamon Sugar Carrots

So many people are afraid to eat carrots. They've been told they're too high in sugar and to stay away. Truth is, you're missing out on a highly nutritious veggie that most kids love.
One cup of carrot sticks has only 50 calories, around 5 grams of sugar and 4 grams of fiber. Plus, they're loaded with water and beta-carotene (amongst others) - two important nutrients for overall health and well-being. Sure they may have a bit more sugar than another veggie, but they're packed with fiber and water they help keep you fuller for longer. Not to mention, I'd much rather munch on some carrots than a bag of potato chips.
In fact, I generally keep a big bag of baby carrots in my fridge at all times. To start, they're yummy in salads and soups (obvi). But mostly whenever I'm feeling snacky, before I dig in to something that may not be such a wise choice, I'll grab a handful of baby carrots. Chances are after snacking on 4 or 5, you'll realize you're not really hungry in the first place and can move on from wanting to eat. Nobody is craving more carrots after they eat a handful (unlike chocolate).
Another reason I keep carrots around is that on those nights (like last night) where I'm trying to put something on the table for dinner, and ut oh, I've got no veggies left, I make cinnamon sugar carrots! OMG they are so delicious. Last night was the first time I've made them for my son and he loved them. #momwin
`Here's how you make em:
1. Boil a pot of water. Sprinkle in a bit of salt (if desired).
2. Toss in the carrots (carefully). Set a timer for 10-12 minutes. Allow to boil until fork tender.
3. Drain the carrots in a colander. Add 1-2 teaspoons whipped or light butter into the hot pan. Allow to melt a bit.
4. Add the carrots back into the pan with the butter and toss around until coated. Then sprinkle with some cinnamon. Stir to coat well. Allow to cook another 30-60 seconds. Serve warm.
