Patriotic Icebox Sandwiches
Celebrate America with these easy homemade ice cream sandwiches!

Ingredients:
- 16 graham crackers
- 2.5 cups 4% cottage cheese
- 1 package vanilla flavored sugar-free fat-free pudding mix
- 6 tablespoons milk of choice
- 1 container Cool Whip, thawed
- 1/4 cup mini chocolate chips, optional
- patriotic sprinkles
- In a blender or food processor, combine the cottage cheese, milk, and pudding mix until smooth.
- Transfer to a large bowl. Stir in chocolate chips, if desired
- Fold in the thawed cool whip. Then transfer to a saran wrap lined baking dish. Place in freezer to set about 30 minutes. Then top with half of the graham cracker squares evenly over the top. Put back in the freezer for at least 6 hours. Remove from freezer and cut between each graham cracker square. Using the saran wrap and cookie sheet, flip over the sandwiches. Then peel off the saran wrap and top each sandwich with the remaining graham crackers. Add sprinkles to a bowl and roll the sides of the sandwiches in the sprinkles. Individually wrap with saran and aluminum foil and store in the fridge.
