Healthy Snowman Peanut Butter Rice Krispie Treats

- 3 cups puffed rice cereal, brown or regular, like Rice Krispies
- 3/4 cup creamy peanut butter, or any nut butter
- 1/3 cup honey (can replace with maple syrup or brown rice syrup)
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 cup white chocolate melting wafers
- 1/4 cup dark chocolate melting wafers
- orange M&Ms
- Add the puffed rice cereal to a large mixing bowl.
- Combine the nut butter and honey in a microwave safe dish. Heat for 30-45 seconds. Stir to combine well.
- Add the vanilla extract and salt to the melted PB honey mixture and stir to combine.
- Pour the mixture into the puffed rice cereal and fold with a spatula to combine.
- Line an 8x8 or 9x9 baking pan with parchment paper and spray with nonstick cooking spray. Pour the puffed cereal mixture into the prepared pan. Using a spatula, press the cereal mixture down into the pan until even.
- Melt the chocolate chips in a microwave safe bowl according to the package. Pour over the rice krispie treats, use a spatula to spread the chocolate out in an even layer. Place in the fridge to set for 30 minutes.
- Remove from the fridge and allow to sit for 20 minutes or so before slicing in to 9 squares. If you cut the rice krispie treats too cold, the chocolate coating will crack.
- Melt the dark chocolate according to the package and scoop it into an icing bag or large ziploc bag. Cut a tiny hole in the end. Draw eyes, mouth, and a top hat on the snowmen. Then use the chocolate to adhere the orange M&Ms as a nose. Best if stored in fridge in an airtight container.
