Apple Pie Protein Breakfast Bake

After making my Pumpkin Pie Protein Breakfast Bake multiple times and totally loving it for breakfast, I decided to try another variation — this time Apple Pie! And since I had some unsweetened apple sauce pouches my son has no interest in collecting dust in the pantry, I figured this would be a great way to make use of them.

Turns out though, the pouches were Mixed Berry unsweetened apple sauce, lol! I used them anyway and it still turned out fab. So use whatever kind of apple sauce you on have on hand or whatever flavor you prefer. And since these bars are packed with protein, they’re an all-in-one breakfast you can take anywhere. Bonus: my 2 year old loves them too!

Apple Pie Protein Breakfast Bake

Make this Apple Pie Baked Oatmeal your go-to breakfast bar ASAP!

Ingredients:
  • 1 1/2 cups quick cooking or old-fashioned rolled oats, process in blender to create a flour
  • 1 cup unsweetened apple sauce
  • 1 cup vanilla protein powder
  • 1/2 cup nonfat milk
  • 2 tablespoons honey
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon apple pie spice
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons white chocolate chips
  • Instructions:
    1. Preheat oven to 350 degrees F. Line an 8-inch baking dish with parchment paper and spray with nonstick cooking spray; set aside.
    2. Combine the dry ingredients in a medium bowl.
    3. Add the wet ingredients and mix well with a spoon.
    4. Spread the batter evenly in the prepared baking pan.
    5. Bake for 28 minutes or until a toothpick inserted in to the center comes out clean. Allow to cool about 2 minutes in the pan before using the liner to help transfer the bars to a wire rack to cool completely.
    6. Melt the chocolate chips in a microwave safe bowl with a teaspoon of coconut oil. Pour over the baked bars and spread evenly. Place in the fridge to set. Cut in to 9 bars; store in an airtight container in the fridge.
