Pumpkin Pie Protein Breakfast Bake

Pumpkin Pie Protein Breakfast Bake

This scrumptious baked oatmeal is like having Pumpkin Pie for breakfast and is packed with protein!

Ingredients:
  • 1 1/2 cups quick cooking or old-fashioned rolled oats
  • 1 cup pumpkin puree
  • 1 cup vanilla protein powder
  • 1/2 cup nonfat milk
  • 2 tablespoons honey
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon pumpkin pie spice
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons mini chocolate chips
  • Instructions:
    1. Preheat oven to 350 degrees F. Line an 8-inch baking dish with parchment paper and spray with nonstick cooking spray; set aside.
    2. Combine the dry ingredients in a medium bowl.
    3. Fold in the chocolate chips.
    4. Add the wet ingredients and mix well with a spoon.
    5. Spread the batter evenly in the prepared baking pan. Sprinkle with chocolate chips.
    6. Bake for 25 minutes or until a toothpick inserted in to the center comes out clean. Allow to cool about 2 minutes in the pan before using the liner to help transfer the bars to a wire rack to cool completely. Slice in to 9 squares; store in an airtight container in the fridge.
