Fruit Pizza

Ingredients:
- 1 1/2 cups rolled oats
- 1 cup plain Greek yogurt of choice, I used 2% (227 grams)
- 1 large egg
- 1/2 cup unsweetened shredded coconut
- 1/3 cup almond flour
- 1/4 cup granulatd sugar
- 3 tablespoons melted butter
- 1/4 cup + 1 tablespoon honey or maple syrup
- 1/2 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- Yogurt topping: 1/4 cup greek yogurt + 1/4 teaspoon vanilla extract + 1 teaspoon honey or maple syrup
- sliced fruit of choice
- Combine ingredients in a medium bowl.
- Press into a greased 9-inch round cake pan. Bake at 350 for 20 minutes.
- Allow to cool completely before topping with the Greek yogurt frosting. In a small bowl combine the ingredients for the frosting with a whisk. Spread over cooled pizza crust. Then top with fruit slices. Keep in the fridge up to 7 days.
