Fruit Pizza

Fruit Pizza

Get excited about this sweet fruit pizza treat made with oats and honey!

Serving Size: 1 slice Makes 8 servings

Ingredients:
  • 1 1/2 cups rolled oats
  • 1 cup plain Greek yogurt of choice, I used 2% (227 grams)
  • 1 large egg
  • 1/2 cup unsweetened shredded coconut
  • 1/3 cup almond flour
  • 1/4 cup granulatd sugar
  • 3 tablespoons melted butter
  • 1/4 cup + 1 tablespoon honey or maple syrup
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Yogurt topping: 1/4 cup greek yogurt + 1/4 teaspoon vanilla extract + 1 teaspoon honey or maple syrup
  • sliced fruit of choice
  • Instructions:
    1. Combine ingredients in a medium bowl.
    2. Press into a greased 9-inch round cake pan. Bake at 350 for 20 minutes.
    3. Allow to cool completely before topping with the Greek yogurt frosting. In a small bowl combine the ingredients for the frosting with a whisk. Spread over cooled pizza crust. Then top with fruit slices. Keep in the fridge up to 7 days.
